I don’t think I mentioned that we went to a Chieftains concert in Kansas City last week. They are on their 50th anniversary tour! For supper that night, we went to O’Dowd’s Little Dublin on the Plaza. The salmon boxty is very tasty. One of us had colcannon as a side dish and we decided we would like to make it at home as part of a special St. Patrick’s Day supper.
A search on “healthy colcannon” led me to the Healthy Irishman’s recipe: POTATO WEEK–COLCANNON.
The plan is to go to Bob’s Seafood to pick up something that swims in the Atlantic Ocean on the theory that the Irish probably eat the fish around them. I’m not sure yet how we’ll fix it–it depends on what we get. It should be a nice night to grill.
A salad should finish things out nicely. Oh, and a bit of Irish whiskey and an Irish beer. I’ll take pictures and post them to Weekend Cooking tomorrow.
