Weekend Cooking: Veggie Pasta — 15 Comments

  1. We often do something similar on the night before we pick up our CSA box. I look through the refrigerator and take out whatever is left from the week before and create pasta or soup or stir-fry, depending on what makes sense. I love roasting eggplant on the grill and using the flesh in all kinds of dishes.

  2. We’ve been so busy this summer that we’ve barely cooked anything much at all beyond steamed veggies and grilled meat. Veggie pasta is something we haven’t had in months, since my husband has been doing so well on a low-carb diet, but I used to love to have it, especially in the summer.

    • This dish even convinced me that I like okra! I slice it thin and roast it which seems to make all the slimy stuff dry up. Quite tasty in with all the other veggies.
