Tomato Jalapeño Chilaquiles — 18 Comments

  1. Oh I bet that roasting adds a great layer of flavor with pretty much no extra work. I haven’t turned to my Joy of Cooking (I have a very old version that’s falling apart and the newer one) in a long time. Now you have me wanting to pull it off the shelf.

  2. Thanks for the recipe! I’ve never made homemade tomato soup before. It *is* the perfect thing to go with grilled cheeses sandwiches (my fave).

  3. I love tomato soup. I didn’t realize the Joy of Cooking recipe was from Rick Bayless. My JOC cookbook is much older and I don’t think it’s the Rick Bayless one. It’s at my daughter’s and we will have to check that out. In the meantime, thanks for sharing the soup. Can’t wait to try.

  4. That sounds so good! I used to have a recipe for roasted red pepper soup. I should look for it again as it was so tasty!

Seems like several of us had Mexican inspired dishes on our mind this weekend – not for my post though. I had tacos for dinner tonight.

  5. This looks delicious. I have the same Joy of Cooking cookbook. I really need to crack it open again. It has some fantastic recipes. I will be making this. Thanks for the link over.
